Yellow peppers & blueberry Salad

Tonight’s salad, is simply divine and loaded with Vitamin C, with its youthing properties, its a winner. Strengthen your immune system, with this Anti oxidant loaded salad.

Ingredients:

  1. 1 whole yellow peppers ‘of course you can use red or green’ no silliness please 🙂
  2. A punnet of Blueberries.
  3. Half a large cucumber.
  4. A bunch of fresh mint.
  5. 1 Raw beetroot. yes raw, you got it.
  6. A handful of seeds. sunflower, pumpkin, sesame.
  7. For the dressing, my usual dressing, 1 tbs organic apple cider vinegar, 1 lemon & a good amount of cold pressed extra virgin olive oil.

Chop & Mix all the ingredients apart from the beetroot which I grate, and add the dressing just before serving, and enjoy an amazing healthy salad that can accompany any protein. xx
