A Gut Nourishing 9-Vegetable Winter Soup

When the weather cools, the body naturally craves warmth, grounding, and gentle nourishment. This nourishing winter vegetable soup is one of my go-to recipes during the colder months—simple, comforting, and rich in plant compounds that support immunity, digestion, and metabolic balance.

This soup is light yet satisfying, easy to digest, and ideal for days when the body needs restoration rather than stimulation.

Ingredients

(All vegetables finely chopped)

  • Green onions
  • Fresh ginger
  • Celery
  • Courgettes (zucchini)
  • Broccoli
  • Artichokes
  • Potatoes
  • Carrots
  • Green peas
  • Mung Beans

Optional additions:

  • Extra-virgin olive oil
  • Sea salt to taste
  • Fresh herbs (parsley or coriander)

Method

  1. Build the base
    In a large pot, warm a drizzle of extra-virgin olive oil over medium heat.
    Add the green onions, ginger, and celery. Sauté gently for 3–5 minutes until fragrant and softened.
  2. Add the vegetables
    Stir in the carrots, potatoes, artichokes, broccoli, and courgettes, pre soaked Mung beans. Mix well to coat with the aromatics.
  3. Simmer
    Add enough vegetable or chicken broth to cover the vegetables.
    Bring to a gentle boil, then reduce to a simmer for 20–25 minutes, until all vegetables are tender.
  4. Finish
    Add the green peas in the last 5 minutes of cooking.
    Season with sea salt, and any optional herbs.
  5. Serve
    Enjoy chunky, or blend partially for a creamy texture while keeping some bite.
