Apples are synonymous with Gut health, they contain both Pectin and Quercetin, the later aiding in the Glucuronidation process in our bodies, don’t worry if you think this process is quite a mouthful, leave the science to me, for now, know that apples are gut healing, potatoes act as resistant starch when cooked and allowed to cool, feeding your friendly gut bacteria. This recipe is easy to make and is very saciating.
Ingredients:
- 1 Large potato ‘preferably organic’ grated
- 1 medium grated onion
- 2 free range eggs, if you are vegan replace with a spoonful of chia seeds.
- 1 green cooking apple grated
- 3 tbs extra virgin olive oil
- 1 tsp sea salt
- A pinch of thyme
Mix all the ingredients together to form a paste, add to a saucepan and cook for 15 minutes on each side on very low heat, enjoy with a side salad, here I serve it with a fresh coriander and pomegranate salad.
