Autumn is full of seasonal goodness to help support our immune system & prepare us for winter. I’ve missed creating new dishes, so tonight I got inspired to create this wholesome dish that has all the macro nutrients we need + some micro nutrient minerals too. I’m using cauliflower carrots 🥕potatoes 🥔 courgette tomatoes🍅 mincebeef, which is high in Vitamin K2, and the beauty here is that this is a one dish meal, its also alkaline/acid balanced.
Ingredients:
- A few cauliflower heads
- 2 Organic Medium size potatoes, or 1 per person.
- 2 Organic Carrots
- 2 Courgettes
- 1 Large onion diced
- 3 cloves of garlic
- 4 fresh organic tomatoes juiced.
- Thyme
- Turmeric
- Seasalt
- Freshly ground black pepper
Preheat oven to 180 degrees, in a shallow saucepan fry the mince on medium heat in its own fat, no need to add oils or butter, once golden add onions, crushed garlic, tomato juice, turmeric, salt and thyme.
Let simmer for 15 minutes till cooked, in a separate pyrex tray, arrange all the chopped and cut vegetables raw, then top with the mince sauce & place in the oven for about 45 minutes or till the vegetables soften. Once out of the oven sprinkle with freshly ground black pepper & enjoy.!
