This is my take on the traditional coleslaw salad, with my added ingredients to make it a detox, delicious, nutritious salad. Cabbage is part of the cruciferous family, its great at detoxing your liver, the added Avocado, adds in the good fats that keeps you fuller longer, with its abundance of vitamins & minerals too. The more colours there are in a dish, the more variety of natural nutrients you will get. Whenever I add the word organic next to an ingredient, please try to source it, as it means that this product has been found to have high levels of pesticides if non organic.
Ingredients:
- Purple cabbage
- Bunch of parsley
- Half a Pomegranate
- Half a ripe Avocado
- Half an Organic Cucumber
- Half a Pink Grapefruit
- Optional some organic blueberries
For the dressing:
- Extra Virgin olive oil
- 1 lemon
- 1/2 tsp Cumin
- 1 tbs apple cider vinegar
- 2 tbs flaxseed ‘Omega 3’
The simplicity of this salad is that its mostly about assembling as very little chopping and shredding, so assemble all ingredients after shredding the cabbage & parsley, mix the dressing and add it just before serving. Serve this salad with fish, Chicken, or some quinoa.
