Baked Organic Potatoes, Avocado & Greens.

fullsizerenderTonight’s recipe is a winter warming favourite one, please let me reiterate a few things first, I can’t emphasises Organic enough when it comes to potatoes, specially if you will eat the skin, which is full of Nutrients and fibres, adding salad greens to the plate, will help your insulin level not to spike when you eat it, so don’t treat potatoes as a vegetable but rather as your carb for the day and include vegetables or salads, here I serve it with Avocados as there fat, which makes this a perfect meal with all the Macro and Micro Nutrients. If you are diabetic then this should be an occasional treat, but I wouldn’t deprive yourself of its good nutrients all together, I much rather you have it then a cereal bar, or indeed any sweet.

Potatoes contain, vitamins C, B6, manganese, phosphorus, niacin and pantothenic acid, along with potassium in the skin.

Simply bake the potatoes in a 180 degrees oven for an hour, no need for foil, serve with your favourite green, lemon & olive oil dressing, Avocados. How quick and simple is that!! x
