Full, full of Nutrients, from Omega 3 to calcium, magnesium, potassium and many more, this dinner recipe is the Bomb.
Ingredients:
- Wild or organic Salmon.
- 150 g Quinoa
- Variety of green vegetables ‘be creative’ here I used courgettes, kale, celery, leeks, french beans, pls feel free to use any in season, mother nature is generous.
- 1 diced onion
- 2 cloves of garlic
- 1/2 tsp Turmeric
- 1/2 tsp ginger
- pinch of sea or pink salt
Simply place the quinoa in a hot skillet and toss till you hear popping sounds close to how you’d cook popcorn, then add all the chopped vegetables, spices. mix together on a medium heat, then add enough water to cover & cook similar to rice. once water is absorbed, lower the heat and let cook for 15 minutes or so.Separately squeeze a lemon on your raw salmon and roast in a hot oven for 15 minutes, once cooked, serve together with the vegetable/quinoa and only then sprinkle with black pepper and or Cayenne pepper, never cook with black pepper as it can be pro inflammatory but served raw, its anti inflammatory… I serve it with an Avocado/onion salad..enjoy xx
