Spinach Tomatoes & kale Pasta

I love pasta, specially the whole wheat or brown rice kind, so if someone tells me you can’t eat it because of the high GL, I would literally cry,!! so in my attempt to keep it in my diet ‘occasionally’ ,I’ve come up with this recipe that includes lots of green vegetables and fibre to balance the blood sugar, and make it low GL ‘Glycemic Load’ & in turn a healthy version.

Ingredients: 

  • Brown rice, spelt or whole grain Pasta.
  • 15 cherry tomatoes.
  • 2 cloves of garlic.
  • 2 tbs cold pressed olive oil.
  • 2 tbs flaxseed.
  • Bunch of baby spinach.
  • Bunch of Kale.
  • Bunch of parsley.
  • Bunch of Cilantro.
  • Sea or Himalayan pink salt
  • Black peppers.
  • Optional 30 grams of Parmisan cheese.

In a shallow saucepan, saute the chopped garlic in the olive oil, then immediately add the tomatoes and salt, let simmer for 20 minutes on low heat.

Meanwhile in a separate saucepan, boil your pasta.

Once pasta and tomato sauce are cooked, assemble all the chopped raw green vegetables, cheese, flaxseed & black peppers in a bowel, add the pasta to the sauce then move to the vegetables bowel and toss. Enjoy..yummy
